Wine Review: This ruby colored Cabernet Sauvignon from Paso Robles is very Old World in style. It opens with a very fragrant black currant bouquet with notes of eucalyptus and ripe Bing Cherry. On the palate, this wine is medium to full bodied, initially rather acidic and juicy. The flavor profile is a tasty cedar infused black currant with notes of minerality. I also detected hints of Bing cherry and Slim Jim toward the end. The finish is dry and its acidity dies down a bit with some aeration. This Cab will go well with food, but should be decanted in the near term. I would server it with a slow-cooked brisket and onions. Enjoy - Ken
Winemaker Notes: This wine is full bodied with excellent structure yet velvety texture on the palate. It exhibits ripe plums and cassis fruit with savory overtones and hints of sage. This lush wine is framed by a firm but supple tannin structure with hints of rose petals and classic cigar-box leading into a smoky finish.
