Wine Review: This opaque and dark ruby colored Cabernet Sauvignon from Spring Mountain opens with black currant and faint cedar bouquet. On the palate, this wine is full bodied, balanced, very smooth and shows a lot of finesse. The flavor profile is a very tasty black currant with notes of black cherry and milk chocolate with some hints of blueberry towards the end. The finish is dry and its flavors and well managed moderate tannins drift away nicely. This Cab is showing well now and I would drink it in the near term with a filet mignon at your favorite steakhouse. Enjoy - Ken

Winemaker Notes: Black currant and licorice dominate with Bing cherry and blackberry. Notes of clove, caramel and cedar in the background with cocoa and graphite. Soft coating tannins greet the forward palate with layers of dark chocolate and long and juicy finish.
