Wine Review: This midnight blue colored Cabernet from Steven Kent opens with a mild blueberry bouquet with a hint of mild oak. On the palate, this wine is medium bodied, balanced and smooth. The flavor profile is a delicious blueberry with hints of black cherry, oak and kiss of milk chocolate. The finish is dry and its well managed tannins drift away for quite a long time. This wine is a perfect wine to enjoy with a filet mignon. Enjoy - Ken
Winemaker Notes: The 2010 Cabernet Sauvignon – Folkendt Vineyard occupies a middle ground between the expansive, fruit driven Home Ranch and the black fruit and tight structure of Smith Ranch in its black fruited and viscous presentation. Cassis and black plum are enrobed in bittersweet chocolate in the round mid-palate, and this wine offers a gorgeously long and detailed finish of fine-grained tannins and chocolate-scented oak. All great wines have a vitality and momentum to them: this offering shows quality in the wonderful transformation of opulent richness in the mid-palate to comparatively hearty tannins and lively acid (and the associated red fruit) on the finish. This structure not only serves to build a foundation under the abundant black fruit but also bodes well for extended aging. As with the other two Cabernets in this series, the Folkendt Vineyard would be well-served by a couple of years of bottle age before drinking. It will age beautifully for 10-15 years with the proper cellaring.
