Wine Review: This very dark ruby colored Cabernet Sauvignon from the Stags’ Leap Winery opens with a mild black cherry, tobacco leaf, and cocoa bouquet with hints of blackberry, vanilla, and violets. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth and supple. The flavor profile is mild red plum and graphite blend with notes of cedar and currant. We also detected hints of white pepper, blueberry, and black olive. The finish is dry, and its moderate tannins build-up and are nicely extended. The Tasting Panel would decant this youthful wine to allow it open up. We would pair this Cab with a New York strip steak, with braised short ribs or with oxtails. Enjoy – KWGTP
