Wine Review: This young and very dark ruby colored Cabernet Sauvignon from Sojourn opens with a fragrant red currant and dried coconut flake bouquet with hints plum, violets, and bay leaf. On the palate, this wine is medium bodied with plus acidity. The mouthfeel is balanced, smooth, and silky. The flavor profile is cassis, graphite, red plum, and cedar blend with notes of marionberry. We also detected some hints crushed stone and cream soda. The finish is dry, and its mild dusty tannins show decent length. The Tasting Panel would decant this Cab to calm its early acidity. With time and air, it really comes together. Then we would serve it with a grilled hanger steak. Enjoy – KWGTP
