Wine Review: This this pitch-black colored Cabernet Sauvignon from Silenus opens with a black currant bouquet with hints of boysenberry and red cherry. On the palate, this wine is medium bodied with nicely integrated medium acidity. The mouthfeel is round, soft, and juicy/ The flavor profile is a black currant and red plum blend with notes of strawberry and cedar. I also detected hints of sautéed red bell pepper, faint minerality and red raspberry tea. The finish is dry, and its dusty tannins stick around for a little while. This Cab would pair well with a New York strip steak. Enjoy - Ken
