Wine Review: This deep garnet colored Cabernet Sauvignon opens with a black currant and balsamic bouquet with hints of cigar box, steel filing, nutmeg, and clove. On the palate, this wine is medium plus bodied with moderate acidity. The mouthfeel is balanced, round, smooth and refined. The flavor profile is a black cherry and black currant blend with notes of milk chocolate and graphite. We also detected some hints of coffee, juicy black plum and cinnamon. The finish is dry and its flavors and polished tannins drift away nicely. This easy to sip Washington Cab would be a nice versatile accompaniment to a filet mignon or Grandma’s lasagna. Winemaker Notes: This Old Vine Cabernet has a dark garnet color with aromatics of blackberries, black cherries, cigar box, and hints of currants. The palate presents a medium-plus-bodied wine framed by firm tannins and bright acidity. Flavors of blackberries, Bing cherries, white peppercorns, leather, and warmed baking spice combine with hints of dried tobacco leaves and bramble. Hold for 4-10 years before enjoying this wine with an excellent a leg of lamb, wild boar ragu, or even ratatouille.
