Wine Review: This bright ruby colored Cab from Sebastiani is showing very well right now. It is clearly one of the best Cabs in this price range and it won its mini blind flight. It opens with a fragrant blend of cinnamon, peppermint, and cedar. On the palate, this wine is medium bodied, well balanced, and very silky. The flavor profile is a very tasty mild black cherry with notes of cinnamon and beet. The finish is very dry and its sticky tannins are present for sometime. This elegant Cab is very food friendly and would pair perfectly with veal parmigianna in the near term. It would also make for a nice glass pour option. Enjoy - Ken
Winemaker Notes: This medium to dark garnet-colored wine has black olive and black cherry aromas with mocha and vanilla from barrel aging. Medium bodied but richly textured, it shows the strength of Cabernet Sauvignon on the palate, yet with rich, choco-rasberry fruit thanks to extended hang time. It doesn’t finish with aggressive tannins thanks to early tannin fining and blending, rather with again mocha and mint despite the cooler vintage. This structured Cabernet Sauvignon will develop nicely through the summer of 2009, but will certainly improve with additional bottle age.
