Wine Review: This very dark ruby colored Cabernet Sauvignon from Sebastiani opens with a black cherry and oak bouquet with a hint of vanilla. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, and bright for a Cab. The flavor profile is a black cherry and black currant blend with notes of red plum, cinnamon, and cedar. I also detected hints of craisin. The finish is rather dry and its sticky tannins build-up and last for a very long time. This Cab benefits from decanting. I would then serve it with a New York Strip steak. Enjoy - Ken
