Wine Review: This medium salmon colored sparkling wine from Mendocino County displays lots of tiny and small streaming bubbles. The bouquet features mild strawberry and moist bread dough aromas with hints of red raspberry, chalk, and walnut. On the palate, this wine is light plus bodied with medium plus acidity. The mouthfeel is very frothy, polished, and fresh. The flavor profile is a mild strawberry and white peach blend with notes of saline, chalky minerality, and nutmeg. We also detected hints of white pepper and toast. The finish is dry and pleasantly refreshing. We would pair this friendly and easy to drink Rose Sparkler with a ham and gruyere quiche or with chilled shrimp cocktail. Enjoy – Ken & Mark
