Wine Review: This Sparkling Wine from Scharffenberger is pale straw in color with a nice display of tiny bubbles when poured. The bouquet is citrus fruit, bread dough and apricots. The mouthfeel is balanced, crisp, smooth, and bright with nice acidity and minerality. The flavor profile is a blend of pineapple, lemon, ginger, pear, and green apple with notes of hazelnut. The finish is semi-dry and pleasant. I would recommend drinking this Sparkler in the near term and pairing it with your favorite sushi. – Joe
Winemaker Notes: After approximately two years on the lees, there are notes of freshly baked bread and pastry that enhances the more fruit forward style of the wine. Finally, after several months on the cork, the wine develops caramel and hazel complexors.
