Wine Review: This very dark ruby colored Cabernet Sauvignon from the Knights Valley opens with an inviting Dr. Pepper and cedar bouquet with hints of graphite, black raspberry, and dried strawberry. On the palate, this wine is medium bodied with medium acidity. We found it to be soft and round. The flavor profile is a cedar plank and cherry-cola blend with notes of graphite and black raspberry. We also detected hints of Orange Pekoe black tea. The finish is dry, and its flavors and moderate dusty tannins are nicely sustained. The Panel would pair this Cab with filet mignon or braised lamb shank. If any is left for dessert, pair it with a black forest chocolate cake. Enjoy – KWGTP
