Wine Review: This pitch-black colored Cabernet Sauvignon from Robert Foley opens with a black currant and pencil shavings bouquet with hints of clove and milk chocolate. On the palate, this wine is medium plus bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, smooth, and seamless. The flavor profile is a cassis and cedar blend with notes of cinnamon and boysenberry. We also detected hints of cardamon, dark chocolate, and nutmeg. The finish is dry, and its flavors, acidity, and dusty tannins are very nicely extended. The Tasting Panel would pair this Cab with a well-marbled ribeye or with a rosemary braised lamb shank. Winemaker Notes: Our flagship wine is made of the best we have – a classic Left Bank Bordeaux-style blend of 80% Cabernet Sauvignon, 17% Merlot and 3% Petit Verdot. Ripe black cherry and black currant aromas open the show and within a few moments a peak of wild violets comes into play. The Claret floods the palate with round rich flavors and textures, a voluptuous middle, which resolves in soft velvety tannins. The flavors linger on and on in the endless finish.
