Wine Review: This very dark ruby colored Cabernet Sauvignon from Chile opens with a fragrant ripe blackberry, olive, and cedar bouquet. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round and savory. The flavor profile is a blackberry, cedar, black olive, and loam blend with notes of crushed stone and black tea. I also detected a hint of black plum. The finish is dry, and its dusty moderate tannins stick around for quite some time. I would pair well-made and rustic styled Cab with a steak burrito. Enjoy - Ken
Winemaker Notes: Lively aromas of blackberry, blueberry and dried cherry intertwine with vanilla and cedar notes. A smooth silky texture with fine tannins and balance, providing a beautiful and lingering finish. Pair with roast beef.
