Wine Review: This midnight purple colored Cabernet Sauvignon is a big boy! It opens with blackberry bouquet with hints of black cherry, black tea, black currant, and cedar. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is nicely balanced, smooth, polished, and seamless. The flavor profile is black currant and graphite blend with notes of boysenberry. We also detected hints of cedar and coffee. The finish is dry, and its very dusty tannins build-up and stick around for a very long time. We would decant this wine before pairing it with a well-marbled cowboy cut ribeye. You can also enjoy this impressive Cab on its own. Enjoy - KWGTP
Winemaker Notes: The 2021 Cabernet Sauvignon is estate grown, produced, and bottled using fruit from 22 distinct blocks throughout our property. A wine with all the hallmarks of a classic Napa Cabernet, it exudes lively aromas of fresh red cherries, black licorice, and a touch of baking spices. The aromas continue onto the palate with notes of chocolate-covered blueberries, fresh herbs, and espresso. This Cabernet is smooth on the palate with silky and velvety tannins, which encourages you to enjoy it now but has the depth to be enjoyed for years to come. Pair with a garlic crusted prime beef tenderloin.
