Wine Review: This inky red colored Cabernet Sauvignon from Paso Robles opens with a ripe plum, raspberry, black pepper and oak bouquet. The full-bodied palate is bright, crisp, juicy, and bold. The acidity is balanced, and the tannins are on the slightly high side. I would recommend decanting this wine for an hour or so before serving. The flavor profile is a blend of plum, blackberry, black cherry, black tea, oak, light clove, and herbs. I also detected some notes of dark chocolate. The finish is dry, pleasant and fades away nicely. I would recommend pairing this Cab with a mushroom risotto and parmesan cheese. - Joe
