Wine Review: This very dark ruby colored Cabernet Sauvignon from Pellet Estate opens with a black currant, black licorice and red plum bouquet with notes of oak and a hint of drunken cherries. On the palate, this wine is full bodied with medium acidity that is balanced. There is a round mouthfeel and the fruit is juicy. The flavor profile is a blend of red and black currant with notes of oak, cinnamon, coconut and red plum. I also detected hints nutmeg and black cherry mixed in. The finish is dry and its fine tannins are nicely integrated and drift away nicely. This Cab is ready to be enjoyed in the near term. I would pair it with a filet mignon. Enjoy - Ken
