Wine Review: This slightly opaque and dark ruby colored Cabernet Sauvignon from the Paul Hobbs opens with mild red currant and blueberry bouquet with hints of toasted oak and marjoram. On the palate, this wine is medium plus bodied, balanced and smooth. The flavor profile is a black currant and black licorice blend with notes of oak blackberry and black pepper. We also detected some hints of coffee mixed in. The finish is dry and its flavors and moderate dusty tannins are nicely prolonged. The Panel suggested that this Cab would pair well with a NY strip steak or on its own by a fire pit. Enjoy – KWGTP
Winemaker Notes: From its alluring deep garnet to its engaging aromas of wild blackberry, cocoa, and dried sage, the wine is endowed with refinement and definition by sourcing from first-rate sites within the region. A core of succulent dark plum and black currant envelope the palate with delineated accents of lavender, tobacco and crushed graphite that hold through the long finish across fine-grained tannins and balanced acidity. Lovely with aged goat milk cheese or classic beef bourguignon.
