Wine Review: This tasty and approachable Paso Cabernet Sauvignon is a clear and deep ruby color, with a bouquet which includes blackberry, black plum, smoke, leather, black cherry, and hints of sandlewood and kitchen spice. On the palate there is concentrated ripe fruit flavors, a smooth mouthfeel and good balance. It's medium-plus bodied with moderate acidity. It’s also fresh and a bit tight right now. Those ripe flavors are marionberry, Bing cherry along with mild toasted oak, graphite and notes of dark chocolate and vanilla. It finishes with supple dry tannins that are long. I would pair this well priced Cab with steak frites. - Mark
Winemaker Notes: Irresistible aromas of rose petals and blueberry cobbler lead to ripe, supple silky tannins. Flavors of vibrant black cherry, candied blackberry, and red plum are complimented by notes of black currant and licorice, with a hint of coffee, dark chocolate, and spice – all culminating into a lingering and delicious finish.
