Wine Review: This opaque and onyx colored Cabernet Sauvignon opens with a cassis bouquet with hints of black cherry and strawberry licorice. On the palate, this wine is medium bodied and nicely balanced between its fruit and acidity. The flavor profile is a tasty plum with nicely integrated oak and hints of black pepper and black cherry. The finish is dry and moderate tannins are nicely prolonged. This Cab paired nicely with the roast top loin smothered with sauteed wild mushrooms and a shallot marmalade prepared at the 2012 WBC.
