Wine Review: This Blanc de Noir from Merriam is pale gold colored with an orange tinge. It opens with a with lots of small and medium streaming bubbles. The bouquet is a fragrant apple cider with notes of dough, cinnamon and chalk. On the palate, this wine is medium bodied, slightly acidic, foamy and has a round mouthfeel. The flavor profile is a mineral influenced mild apple cider with notes of bread dough, lemon, minerality and almond. The finish is quite refreshing. I would pair this sparkler with classic gruyère gougères or even chicken piccata. Enjoy – Ken & Mark
