Wine Review: This deep garnet colored Cabernet Sauvignon from Merriam opens with a cranberry and black plum bouquet with hints of coconut, chocolate cake and maraschino cherry. On the palate, this wine is medium plus bodied, slightly acidic, plump and juicy. The flavor profile is a tart cranberry with notes of tangy wild strawberry teaberry, oak and earl grey tea. The finish is dry and its mild silky tannins and fruit flavors are nicely extended. We found this Cab evolves quite nicely with aeration. Then we would pair it with a bison ribeye.
