Wine Review: This midnight violet colored Cabernet Sauvignon from Merriam is a big boy wine. It opens with a ripe black cherry liquor bouquet with a hint of boysenberry. On the palate, this wine is medium bodied, balanced, chalky and fruit forward. The flavor profile is a black currant with notes of ripe blackberry, dusty minerality espresso and lots of French oak. The finish is very dry and it has substantial chewy tannins that are present throughout. This Cab definitely needs to be decanted in the near term. I would pair it with a thick cut of a well-marbled ribeye. If you like big tannic wines, go for this wine now. If not, this is a Cab that I think will shine nicely in 3-5 years+. Enjoy - Ken
Winemaker Notes: Deep dark magenta purple with notes of cassis, blackberry, mocha and clove. Nicely layered with concentrated flavors of cherry, cassis, blackberry, plum, spice, tobacco and chocolate. While very pleasing upon release, this fantastically vibrant and concentrated wine promises to richly reward after a few years of aging because of the superlative quality of the fruit and underlying tannins
