Wine Review: This dark ruby colored Cab from Merriam opens with a black cherry bouquet with a hint of smoke, leather and clove. On the palate, this wine is medium bodied, balanced, and savory. The flavor profile is a black currant and black raspberry blend with a good dose of black pepper. The panel also detected hints of oak and dark chocolate as well. The finish is dry and its moderate tannins are slightly prolonged. The panel thought this Cab would pair well with a NY strip steak or herb roasted lamb. Enjoy – KWGTP
Winemaker Notes: Deep, dark and ruby in color with bing cherry, eucalyptus, strawberry and cedar in the nose. Flavors of red berries, black cherry and bittersweet chocolate with a medium body. Abundant mouthfeel with no hard edges–bright acid, tannins with a slight toast of oak. A lasting finish of cassis, cedar and tobacco. Drink now, but will age gracefully for 5-8 years.
