Wine Review: This dark ruby colored Cabernet Sauvignon from Marietta opens with a graphite and mild black cherry bouquet with hints of violet, cola, pine, and blueberry. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, very smooth, rich, and savory. The flavor profile is tobacco and black cherry blend with notes of black tea, cedar, and integrated stone dust. We also detected some hints of black licorice, sage, and faint lingonberry. The finish is dry and its bold and dusty tannins build up and stick around for a very long time. The Tasting Panel would decant this Cab for a while before pairing it with a porterhouse steak. Winemaker Notes: With a dark, dusty, salty mix of carpaccio, sage, and thyme, this mountain Cabernet with coastal influences cranks up with nuance and tension. Inky mulberry stains the mouth followed by puckery intensity, with a silty, dense finish. Deep and clean, tasting is akin to diving into a shaded mineral swimming hole surrounded by craggy boulders and emerging refreshed, vibrating, and wildly awake.
