Wine Review: This very dark purple colored wine opens with a mild black cherry like bouquet with a hint of sage. On the palate, this wine is medium bodied, very well balanced, and smooth. The flavor profile is a juicy black cherry with a hint of black pepper. This wine is quite dry and its building tannins sail on for quite sometime. Pair this elegant cab with filet mignon. Winemaker Notes: A multi layered nose showing pristine ripe Cabernet Sauvignon aromas of blackcurrants and blackberries, as well as cedar, raspberry jam, and vanilla. The palate is full and rich, primary fruit flavors of dark black fruits, violets, and cassis coupled with wild sage, licorice, and earthiness. The wine has great density with firm supportive tannins that match perfectly with the long finish. Enjoy now through 2017.
