Wine Review: This slightly opaque and very dark purple colored Cabernet opens with a black currant and blueberry bouquet. On the palate, this wine is full bodied, nicely balanced, and smooth. The flavor profile is a gently oak infused blueberry and black currant blend with a hint of black cherry. The finish is dry and its moderate dusty tannins are nicely prolonged. This Cab is very food friendly and went perfectly with beef bourguignon. Enjoy - Ken
Winemaker Notes: The balanced 2007 growing season allowed for even ripening throughout each of our Cabernet vineyards. Early in the fermentation the berries revealed concentrated fruit forward flavors and excellent color indicating the high quality of the 2007 vintage. The wine is deeply pigmented and has aromatics of perfectly ripe blackberries, plum, notes of dark chocolate, licorice and spice. The palate is refined and has exceptional texture and length.
