Wine Review: This midnight purple colored Cabernet Sauvignon from Paso Robles opens with a fragrant black currant and pencil shavings bouquet with hints of black olive and oak. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, and smooth. The flavor profile is a little rustic, featuring black currant and graphite with notes of espresso and black olive. I also detected some hints of very dark chocolate, faint plum, and oak. The finish is dry and its very dusty tannins build-up and stick around for quite a while. I would decant this Cab for a bit before serving it with marinated grilled steak tips. Enjoy - Ken
Winemaker Notes: Exhilarating blackberry and blueberry aromas are enhanced by crushed violet, herbes de Provence, and spiced tea. On the palate, dense and soft, with finely textured tannins. Juicy layers of black and red currants lead to a bright finish, accented by pastry notes from extended barrel aging. Delicious with a rosemary-seasoned ribeye and garlic roasted potatoes.
