Wine Review: This very dark ruby colored Reserve level Cabernet Sauvignon from Ferrari Carano opens with a faint wet stone and mild black plum bouquet. On the palate, this wine is medium bodied with medium acidity. The mouthfeel is balanced, round and a bit rustic. The flavor profile is an oak and black currant blend with notes of crushed stone minerality. I also detected hints of black cherry, black pepper, and loam. The finish is dry, and its dusty medium tannins stick around for quite a while. This Cab would pair well with a New York strip steak. Enjoy – Ken
Winemaker Notes: This wine is full-bodied and rich with layers of boysenberry jam, currants, leather, maple, and cedar aromas complemented by black cherry preserves and warm clove flavors. Firm tannins and a touch of toasty mocha linger on the finish. Our Reserve Cabernet Sauvignon pairs well with roasted, broiled or barbecued game and red meats such as lamb and beef.
