Wine Review: This slightly opaque and very dark ruby colored Cabernet Sauvignon opens with a black currant and mint bouquet with hints of black licorice nips, violet, and cedar. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is very nicely balanced, smooth, and delicate. The flavor profile is a stony minerality and blueberry blend with notes of oak. We also picked up some hints of black raspberry, mocha, sage, and black tea. The finish is dry, and its well-managed refined tannins stick around for quite some time. The Tasting Panel would pair this Cab with a New York strip steak or with a prime rib with Yorkshire pudding. Winemaker Notes: This dark and voluptuous wine displays a beautifully complex nose of red and black currants, slate, anise and sweet tobacco leaf, with hints of quince and black cherry. The palate is lush and layered, unfurling in waves of lush fruit, dark chocolate, cinnamon and black tea that culminate in a remarkably long, complex finish.
