Wine Review: This midnight purple colored Cabernet Sauvignon from Davis Estates opens with a tobacco and cigar box bouquet with hints of sandalwood, cassis, and red licorice. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is nicely balanced, silky, seamless, plush, and has complete and full palate coverage. The flavor profile is a delicious black currant and graphite blend with notes of cocoa dust and blueberry. We also detected hints of mild black cherry, oak, and gentle oolong tea. The finish is dry, and its flavors, acidity, and well-managed refined tannins build-up and are sustained for a very long time. The Tasting Panel would enjoy this awesome Cabernet Sauvignon on its own by the fireplace. With food we would pair this gem with a Snake River Farms dry aged ribeye steak. Enjoy - KWGTP
