Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Davis Estates opens with a black currant and cigar box bouquet with hints of red plum, tobacco leaf, and wet clay. On the palate, this wine is full bodied with integrated medium plus acidity. The mouthfeel is balanced, smooth, and polished. The flavor profile is a black cherry and mocha blend with notes of bacon and stone dust. We also detected hints of oak, blueberry, and a touch of black licorice. The finish is very dry, and its flavors, acidity, and tannins build-up and stick around for quite a while. The Tasting Panel would decant this Cab for a while before pairing it with a well-marbled ribeye or Roy’s rib roast. Enjoy – KWGTP
