Wine Review: This very dark ruby colored Cabernet Sauvignon from Davis Estates opens with a black currant and elderberry bouquet with hints of black licorice and cola. On the palate, this wine is medium plus bodied with integrated medium acidity. The mouthfeel is balanced, smooth, and stylish with nice tension. The flavor profile is a black plum and oak blend with notes of elderberry and graphite. We also detected hints of green tea, tobacco, and cinnamon. The finish is very dry, and its flavors, acidity, and tannins build-up and last for quite some time. The Tasting Panel would pair this Cabernet Sauvignon with cowboy cut prime rib or osso buco.
