Wine Review: This opaque colored red blend was from a new producer for me. It was a nice very nice first impression. It opens with a fragrant black raspberry and red currant bouquet. On the palate, this wine is medium bodied, balanced, and smooth. The flavor profile is a tasty black cherry with notes of plum and blueberry. There was also a touch of menthol and black pepper detected as well. The finish is dry and its moderate tannins are sticky. This wine would pair well with a big rack of barbecue ribs. Enjoy – Ken
Winemaker Notes: The 2008 DAOU Celestus opens with lush aromas of dark fruits, licorice and lead pencil that lead to an integrated and satiny mid palate accentuated by the French oak. The predominant Syrah imparts it with flavors of "garrigue" - with hints of lavender, sage, wild thyme and dark cherry. The Cabernet Sauvignon and Petit Verdot add structure and power to the wine leading to an elegant and long finish that that just keeps getting better as the wine opens up in the glass.
