Wine Review: This India ink colored Petite Sirah based blend from DAOU opens with a blackberry and black licorice bouquet with hints of cherry brandy and mocha. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round, voluptuous, and rich. The flavor profile is delicious stewed black plum and black licorice blend with notes of espresso and extracted black currant. We also detected some hints of dark chocolate brownie batter and cedar. The finish is dry, and its big sticky tannins are extended for a very long time. The Tasting Panel would enjoy this big boy wine by the firepit. With food, we would decant it before serving it with braised short ribs and cheese grits. Enjoy – KWGTP
Winemaker Notes: The 2021 DAOU Unbound is a daring cuvée of Petite Sirah, Tempranillo, and Tannat. The nose is floral and earthy, showing aromas of blackberry, blueberry, tobacco, and espresso. Flavors of dark fruits, grilled plum, dark chocolate, and pomegranate cascade along a balanced, mouthwatering texture. Impeccable mid-palate weight is marked by fine acidity and tannin structure, leading to a medium-long finish that will evolve favorably for years to come.
