Wine Review: This very dark garnet colored Cabernet Sauvignon from Crossbarn opens with a spiced black currant and black raspberry bouquet with hints of clove, red beet, violets, and craisin. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is balanced, round, fresh, and a little mouthwatering. The flavor profile is cedar and mulberry blend notes of stony minerality and spiced red plum. We also detected hints of pomegranate, red licorice, and nutmeg. The finish is dry, and its mild subtle fine tannins fade away nicely. The Tasting Panel would pair this Cab with a rack of lamb or with a bison burger. Enjoy – KWGTP
Winemaker Notes: This wine shows deep ruby in hue with a bouquet of crushed violets, red currant, and black plum. A bounty of concentrated black fruits is featured on the palate, accompanied by dried herbs and cacao. Structured tannins provide this full-bodied wine with a unique depth along with a lively acidity that gives tension to a long, seamless finish. Pair with a grilled skirt steak with shiso chimichurri.
