Wine Review: Champagne Collet is always a nice treat from the wines that I review. Although it leans on the side of elegance like Laurent-Perrier Brut, it still boasts plenty of toasted notes. This sparkler has small bubbles that is usually indicative of a Champagne focused on stone fruits, ginger, and toasted almonds. These were the exact notes I found in the bouquet. The palate was exciting with each bubble creating a micro-burst of flavor on the palate. Toasted nuts with hints of glazed apples and pears, on top of a bed of lightly toasted croissants. This is a fish and chips Champagne but it would also go well with fried oysters and calamari. - Nicolay
Winemaker Notes: This elegant champagne is made from only 20 crus and aged for a minimum of four years. The wine has a fine bead and is illustriously pink with copper reflections. The nose shows dark red fruits and floral rose notes. The palate is rich with concentrated fruit weight and distinguished floral and honeyed flavors complementing a perfect balance between depth and freshness. Pair with raspberry-white chocolate macaroons.
