Wine Review: This small bubbles Rose Champagne is more rose petal pink in color than the usual salmon. The nose is vibrant with raspberries, strawberries, and hints of lemon zest. On the palate, the wine adds on flavors of mint and star anise. The finish is electric with plenty of acidity and a lining of ginger that makes your mouth pucker for more. This would pair especially well with seared scallops. – Nicolay
Winemaker Notes: Intense and luminous peach-pink color. First floral fragrances which give way to fragrances of orange, mandarin, yellow peach, and red fruits such as mulberries and raspberries. A beautiful freshness, a delicate nose with notes of brown sugar. Enjoyment and elegance describe this cuvee Brut Rose. A richness of fruits – mulberry and blackcurrant, peach. Notes of note of cocoa, making a round, supple, velvety wine. A beautiful, silky texture, sustained by a tender effervescence. It will pair perfectly with a parmesan-almond biscuit or a Cotentin blue lobster.
