Wine Review: This opaque dark purple colored Cab from Washington opens with a blackberry and plum bouquet with a hint of black licorice. On the palate, this wine is medium bodied, balanced, soft, and very silky. The flavor profile is a gentle black cherry with a hint of Special Sweet dark chocolate and blackberry. The finish is quite dry and its sticky tannins build up and linger for a while. From a food standpoint, you will need some fat to reel in the big tannins that linger at the end. Try serving this Cab with a chuck pot roast. Enjoy - Ken
Winemaker Notes: The Indian Wells Cabernet is our warm climate ripe, jammy New World style of Cabernet Sauvignon. The wine really typifies the Wahluke Slope region with up front, dark fruit aromas and flavors with hints of vanilla. Vineyards in the area are more than a decade old now and showing character and complexity. Pair with stuffed peppers, duck, beef, veal, lamb, & dark chocolate.
