Wine Review: This deep ruby colored Cabernet Sauvignon based Bordeaux wine opens with a moist pipe tobacco, cocoa powder, and black cherry bouquet with hints of stewed black plum or stone dust. On the palate, this wine is medium bodied with medium plus acidity. The mouthfeel is round, balanced, dense, and savory. The flavor profile is an oak influenced stewed black plum with notes of black tea and silty stone. We also detected hints of dried herbs and dark chocolate mixed in. The finish is dry and its big and bold dusty tannins linger and last for a very long time. The Tasting Panel would decant this young wine, as its smooths out nicely with some air. We would pair it with Roy's rib roast or with Bobby Flays cast-iron porterhouse steak with brown butter and blue cheese. Enjoy – KWGTP
