Wine Review: This opaque and very dark ruby colored Cabernet Sauvignon from Chappellet opens with a white chocolate, and red cherry bouquet with hints of pomegranate. On the palate, this wine is medium to full bodied, balanced, smooth and a little juicy. The flavor profile is a chalky cherry and blueberry blend with hints of mild minerality and wintergreen. The finish is dry and its moderate tannins linger for a very long time. This Cab is versatile, elegant and friendly. It would pair well with veal medallions. Enjoy - Ken
Winemaker Notes: Deep, rich and beautifully structured, this is a classic expression of hillside Napa Valley Cabernet Sauvignon, offering alluring aromas of blackberry, cassis and chocolate, along with hints of espresso, anise and fragrant herbs. On the palate, creamy oak and concentrated berry and black cherry flavors are underscored by velvety tannins and subtle notes of cola, clove and black licorice.
