Wine Review: This dark ruby colored Cabernet Sauvignon from Caymus opens with a dark chocolate and cedar bouquet with hints of pencil shavings and coconut. On the palate, this wine is medium bodied with integrated medium acidity. The mouthfeel is balanced, round, smooth, and fruit forward. The flavor profile is a black cherry and milk chocolate blend with notes of coconut and strawberry. I also detected hints of red licorice and cedar. On the finish, its flavors, acidity, and mild tannins drift away nicely. This wine benefits from some decanting, so let it breath for a while before pairing this fruity Cab with a New York strip steak. Enjoy - Ken

Winemaker Notes: This special anniversary vintage celebrates 50 years of making Cabernet in Napa Valley. It results from happy soils, healthy vines, low crop yield, low to no irrigation, and harvest at high ripeness levels – all key ingredients of the Caymus style. The wine is rich and round on the palate, with textural tannins that are non-bitter. Evidence of French oak but not overplayed. Acidity for balance, but not tart. There are no hurdles to enjoying the delicious essence of this wine, which exhibits an expression of the style for which Caymus is known.
