Wine Review: This midnight purple colored Cabernet Sauvignon opens with black currant and blackberry bouquet with hints of cranberry and wet stone. On the palate, this wine is full bodied with integrated medium acidity. The mouthfeel is balanced, round and very approachable. The flavor profile is a red currant and a cocoa powder blend with notes of red licorice and red plum. I also detected some hints of fine grained minerality and oak. The finish is nicely sustained, as its well-managed moderate tannins build-up and linger for a while. This Cab was enjoyed by all that tried it. It did not last very long. I would pair it with a New York strip steak. Enjoy – Ken
Winemaker Notes: A small, inaugural release from Caymus Vineyards, this wine is a California-appellation Cabernet Sauvignon – supple, dark, and rich, bearing the signature hallmarks of Caymus. It is sourced from sites throughout the state which feature climatic conditions, soils and topography that are ideally suited to Cabernet. This project stems from excitement over California's diverse vineyard land, often in lesser-known areas, with the potential to produce exceptional Cabernet.
