Wine Review: This pitch-black colored Cabernet Sauvignon from Caymus opens with a black licorice and blackberry bouquet with hints of tar, flint, and black plum. On the palate, this wine is full bodied with integrated acidity. The mouthfeel is balanced, very smooth and mouth coating. The flavor profile is stewed black plum and blueberry blend with notes of dark chocolate, cedar, and cherry-vanilla. We also detected hints of toasted almond and stony minerality in the mix. The finish is dry, and its moderate tannins linger and last for a while. The Tasting Panel would enjoy this Cab by the fireplace as a sipper. With food we would pair it with beef stew or with a flourless chocolate cake. Enjoy - KWGTP
