Wine Review: This dark ruby colored Cabernet Sauvignon opens with a boysenberry and black plum bouquet with a hint of pencil shavings. On the palate, this wine is medium bodied, balanced, refined and round. The flavor profile is gentle plum and black cherry blend with notes of mild minerality. We also detected hints of cinnamon, licorice and oak. The finish is dry and its fine-grained tannins drift away nicely. The Panel would pair this Cab with a tenderloin of beef in a mushroom, Dijon mustard and red wine sauce or duck confit. Enjoy – KWGTP
