Wine Review: This dark ruby colored Cabernet Sauvignon based blend was a hit with the Tasting Panel. It opens with a cherry and sandalwood bouquet with hints mild cedar, saddle leather and saw dust. On the palate, this wine is medium plus bodied, well-balanced, a little tight and smooth. The flavor profile is a tasty cherry and mild caramel blend with notes of black tea and cedar. We also detected hints of plum, oak, gentle minerality and chocolate towards the end. The finish is dry and its flavors and moderate tannins build-up and last for a very long time. We would suggest decanting this wine in the near term and pairing it with a well-marbled ribeye or braised short ribs. We also thought that if you were not in a hurry, it would benefit for cellaring.
