Wine Review: This pitch black colored Cab based wine from Washington State opens with a black raspberry bouquet with a hint of boysenberry. On the palate, this wine is medium bodied, slightly acidic and savory. The flavor profile is a blackberry jam with notes mineralty and oak. I also detected hints of black currant and a touch of strawberry licorice as it opened up. The finish is dry and its flavors linger and are nicely prolonged. I would certainly decant this wine for 30+ minutes in the near term and then pair it with Capital Grille's Kona crusted sirloin with shallot butter. Another option is to cellar it for a couple of years. Enjoy - Ken
Winemaker Notes: While our Columbia Rediviva is defined by the uniqueness of its blend, it is also a wine with a deep-rooted sense of place. Our 9-acre block of Phinny Hill Vineyard is located on the western side of Horse Heaven Hills at the top of a sun-drenched hill overlooking the famed Champoux Vineyard. Featuring the second highest percentage of Cabernet Sauvignon (84%) that we have ever included in the blend, this wine offers beautiful structure and sophistication, with a mesmerizing core of luscious black cherry, cassis and baking spices.
