Wine Review: This graceful French Rosé Champagne is a deep pink color with copper highlights and long-lasting streaming bubbles It opens with a bouquet of red apple, brioche, red cherry, strawberry crème, and wet stone. Enjoyably light mousse on entry, it is slightly creamy, round, refined, and well-balanced. It is medium bodied with crisp medium-plus acidity. I found flavors of strawberry, McIntosh apple, chalky minerality, toasted sourdough bread, red cherry, lemon zest, and a spice note. The finish is bright, mineral-driven, and long lasting. Sip with chocolate covered strawberries. - Mark

Winemaker Notes: The color is pale pink with golden, coppery glints. The very fine, light bubbles form a lively ring. The fine, subtle nose offers delicate, fruity flavors of red fruit (wild strawberry, cherry). On the palate, the wine is satin-smooth and deliciously fresh. It is generous, well-structured, and round. The refined aromas of fruit (raspberry) gradually grow more intense, and blend perfectly with citrus notes against a slightly spicy and mineral background. The elegant finish has great length. The Rosé Absolu is a delicious partner for lamb and goes harmoniously with red fruit desserts.
