Wine Review: This salmon colored Champagne opens with a mild cranberry and strawberry bouquet with a hint of wet stone. On the palate, this wine is light bodied, slightly acidic and very flavorful. Those flavors are a strong mineral infused plum and cranberry with hints of watermelon and strawberry in the background. The finish is rather dry and its mineral flavors linger for a while after it is gone. This Champagne will pair nicely with fresh sliced Norwegian salmon. Enjoy – Ken
Winemaker Notes: The colour is a soft pink with salmon highlights. Fine froth forming a creamy ring in the glass. The nose is generous, intense and refined, with very marked notes of small red fruits, especially wild strawberry. It carries suggestions of almond and redcurrant jelly. As the wine opens up, there are notes of lime and hawthorn blossom. Good weight on the palate. Initial impact is slightly acid, then red fruits are back to the fore with blackcurrants and redcurrants. The finish is delectable and delicately spiced.
