Wine Review: This deep garnet colored Cabernet Sauvignon from Barlow opens with a fragrant black raspberry and violet bouquet with hints of sandalwood, lingonberry and rose petals. On the palate, this wine is full bodied with medium plus acidity. The mouthfeel is balanced, round and dense. The flavor profile is mentholated black cherry and blackberry blend with notes of toasty oak and graphite. We also detected hints of boysenberry and bay leaf at the very end. The finish is rather dry, and its flavors, acidity, and very very dusty tannins build-up and are nicely sustained. We would pair this Cabernet Sauvignon with a well-marbled ribeye steak.
